Just so we ar eclear here...the rims that i am trying to fit on my car are 16's... they are 9's in the rear and 7's in the front...

i thought they were bigger.

i've got about 5/16th spacers on the fronts and none on the rears with boxter "s" 17s.

7 1/2 fr, 9 rear.

As long as you have spacers that are somewhere around 25mm, you will be fine.

IIRC, you need to run about 22mm in the front and 25mm in the rear. Scott can probably verify that for me.

What tires would you use for the 17 inch rear 8.5" wide rims from a 2003 Boxster? 255/40/17?

and I am certain you will need to roll the fenders to get any 18" rims to fit.
I've got 18" rims on my 944 & I didn't need to roll the fenders to get them to fit. I've had no problems with them rubbing.
